The scam emails start with asking if you’re available.

These emails begin by asking if you are available (see examples), and they are using a Gmail or other account with the UAMS person’s name displayed. When you respond, the scammer escalates to the point of asking for Apple gift cards. Usually the request is for 10 cards at $100 each. If you comply, the scammer can also gain access to your Apple account and possibly other accounts.
